A Clafoutis is a
typical home-style French dessert resembling a thick, cakey baked custard which
is sometimes called a French Flan. It’s
name (sometimes spelled Clafouti)
originates from the French verb claufir,
which means to attach with nails.
Clafoutis is one of my favorite “pantry desserts” – a sweet that you can whip up in minutes with just a few simple ingredients. During a private cooking class last week, I altered my traditional recipe to make it gluten and dairy free, and was really impressed with the results. The recipe is below - but if you prefer the original, Blueberries, cherries, pears, apples, plums, and prunes could also be used instead of raspberries.

Serves

Ingredients:
nonstick spray for pan
5
tablespoons sugar, divided
2
extra-large eggs
1 cup almond flour
1/2
cup almond milk
½
cup non-dairy yogurt
1
teaspoon pure vanilla extract
1
teaspoon orange zest orange
Pinch
of salt
1
cup raspberries
Confectioner’s
sugar, for dusting
Preparation:
Preheat
oven to 375 F degrees. Butter a 8-inch
baking dish. Sprinkle 2 tablespoons granulated sugar over the bottom. Beat the eggs and the remaining 4 tablespoons
sugar in the bowl of an electric mixer fitted with the paddle attachment on medium high speed, until light and fluffy, approximately 3 minutes. With mixer running on low speed, add in the almond flour, almond milk, yogurt, vanilla extract, orange zest, and salt.
Add
raspberries to the bottom of the baking dish, turn to coat in sugar, and pour
batter over the top. Bake for 15 to 20 minutes until the top is golden and
custard is set. Serve warm, sprinkled
with confectioners’ sugar.
