INGREDIENTS:
2 egg yolks
2 tablespoons red wine vinegar
2 tablespoons lemon juice
1 tablespoon dijon
kosher salt
1-1/2 cups canola, peanut, vegetable, or a very light olive oil
METHOD:
Place egg yolks in food processor; add the vinegar, lemon juice, and mustard. Season with salt - to taste. Turn on the processor and very slowly start drizzling in the oil, until the mixture starts to thicken, and then you can start adding the oil in a bit of a medium steady stream. Place into refrigerator in an airtight, covered glass container. – Enjoy!
